White truffle from Italy
Tuber Magnatum pico
Coming straight from Italy, it is considered the diamond of gastronomy. Also called "trifola" or the white truffle of Alba.
Season: early October, late December
Black autumn truffle from Italy
Tuber Uncinatum
A subtle taste reminiscent of hazelnut with a characteristic aroma in addition. Some also attribute a note of undergrowth to it.
Season: early October, January.
Italian winter black truffle
Tuber Melanosporum
The black winter truffle is known in Italy as the black truffle of Norcia. It is also cultivated in France: the truffle of Périgord.
Season: December to February.
Italian white spring truffle
Tuber Borchi Vitt
Also known as "marzuolo".
Season: February to April
Black summer truffle
Tuber Aestivum
Known mainly as "scorzone", it is one of the most popular truffles in Italy for its sweetness and subtle aroma.
Season: May to September.
